One of my favorite recipes is from the Fresh Farm House Kitchen Cookbook.
Tomato basil chicken pasta
for 2 servings
2 boneless skinless chicken breast
salt/pepper
2TBS olive oil
angel hair pasta (4oz cooked serving)
2c roma tomato chopped
1/2 c fresh basil chopped
2tp minced fresh garlic
3TBS butter (real butter)
fresh grated parmesan cheese(optional)

place chicken breast into large plastic bag and pound it out until they're evenly thick. sprinkle both sides with salt/pepper, in a medium sized skillet, heat olive oil over medium heat, while skillet heats up, fill medium sized pot with water and bring to boil to cook pasta.
once skillet is hot place chicken in and let cook about 5mins per side until juices run clear. Place pasta in boiling water and cook until desired tenderness.
when chicken is done cooking, plate and set aside. Place tomato and butter in skillet and let cook for 1 min while you stir until butter is melted. add in garlic and basil then lower heat to simmer. when pasta is done drain and rinse in hot water, place pasta in bowl slice chicken and on top, then top with tomato-basil sauce. add grated parmesan.
